Things I'm Thinking About on Tuesday (12-3-2013)

If you've been reading my blog for a while, you might remember back when I used to do Five Fun Things on Friday.  Every Friday I wrote those posts about things I'd spotted on the web and sometimes a little about what was happening in my life.  I enjoyed sharing things that way, but eventually it got to be a burden to do it every Friday and I switched to Phase One Fridays, which I'm really committed to now because of how it perfectly fits the overall purpose of the site.

But lately I've been missing the opportunity to share things just for the fun of it.  After thinking about it for a few weeks, I've decided to do Things I'm Thinking About posts occasionally, probably not every week, and not always on the same day of the week, but when I find enough worthwhile things for a post I'll share them.  Of course, I'm always thinking about food, so let's start this first one out with the amazing-looking Chopped Brussels Sprouts Salad with Creamy Shallot Dressing shown above from Pinch of Yum.  The salad has a few ingredients that aren't especially SBD friendly. (Like bacon!  Did I mention there's bacon?) There's also a lot of juice in the dressing that would make it high in sugar, but I think it would be fun to try coming up with a diet-friendly version of this salad.

CrockPot Turtle Pudding (gluten free) Recipe

HAPPY HALLOWEEN!
and happy end of Crocktober!

Since today is the most sugar-infested day of the year, what do I have for you? 

MORE SUGAR!

but this is high-class sugar. It's turtle pudding. In your crockpot.

it's okay with me to eat it with a spoon, hot, right out of the crock. I won't tell anyone.

pinky-promise.

The Ingredients.
serves 8
1 (16-ounce) box brownie mix (I used the Betty Crocker Gluten Free mix)
1 large egg
1/4 cup canola oil
1/4 cup water (room temp, or slightly warm)
1 cup chocolate chips
1/2 cup chopped walnuts
20 wrapped soft caramels (unwrapped)
whipped cream or vanilla ice cream for serving (optional)

The Directions.

Use a 4 or 6 quart slow cooker with an inserted oven safe dish. I used a round 4-quart cooker with a 2-quart inserted Corningware casserole dish.
In a mixing bowl, combine the brownie mix, egg, oil, and water. When batter has formed, stir in the chocolate chips and walnuts. Pour batter into your casserole dish. I didn't spray the inside of the dish with cooking spray, but you can if you'd like (it would probably be easier to clean up!). Unwrap all of the caramel candies and press them into your brownie batter. 
Add 1/2 to 1 cup of water into the bottom of your slow cooker, then lower in the brownie dish. Be careful not to slosh water into your turtle pudding!

Cover and cook on high for 3 to 4 hours, or until the edges have pulled away from the sides and the center has set.
Unplug your cooker, and let the dish set in it for 1 hour with the lid off before removing. Serve warm with whipped cream or vanilla ice cream.

The Verdict.

ooey gooey caramel chocolatey goodness. Delicious. Wonderful. So good you don't really want to share with your family.

On the 10th Day of Christmas: I helped you with your men!


It's the 10th Day of Christmas and it's time (finally) to talk about our men!  Poor guys...they always get left for the end.  The good news is that there is still time to order and receive for the special boy in your life...but you better not wait too much longer.  If I were you, I'd make some decisions today!

And now, on to the men...

Poor Andrew...he's always the last one I shop for.  Andrew, my dad, my two grandpas, my father-in-law and my brother are at the end of my list.  Boo.  It's not nearly as much fun shopping for those guys as it is for the ladies in my life.  I, of course, went straight to my favorite store, Nordstrom and partnered with them on this guy-shopping extravaganza!  Nordstrom just makes it simple...free shipping, free returns and simple exchanges.  If I buy my guys something they don't love, they can simply take it back.  That's so nice this time of year!

First up...things my guys need to wear for work or other more formal events...and you can shop this post just by clicking on the picture (fancy, right?!).



Andrew wears a shirt and tie every day to work...and he also wears cuff links too.  When a guy wears a shirt over and over again...if it's not a great quality, it won't last.  I really love these David Donahue shirts because they fit guys of every size (regular, big, and tall) and will last and last.  When Andrew invests in his shirts, he has them forever...I consider them a great purchase.  

I also think cuff links are a great gift to give to those guys in your family too because they fit men of all ages, shapes and sizes...and they can be so fun and personal!  Did you see the little golfer cuff links from David Donahue?  When I was looking at his awesome shirts, I found these great cuff links too!  What about the scales of justice ones?  So fun for the golfer or lawyer in your life.  Here are some other fun cuff link choices...I kind of got cuff link obsessed but trust me, this is probably the most fun piece of jewelry your guy could have.

Andrew would love the football cuff links, my cousin should buy her hubby the soccer ones, Sean totally needs the boxer and the lab ones (he could wear one of each!) and I need a pilot on my list just so I can get the propeller ones!  Such a clever gift for men!

Something else I like buying guys this time of year?  Shoes!


In my family, slip-on shoes for guys are a big deal.  I guarantee you that at least 3 men will receive a pair of Toms or Sperrys this year from Santa.


Last Christmas, Andrew got this Art of Shaving Kit and fell in love!  This isn't something he would normally go out and purchase for himself but he was oh so thrilled someone else bought it for him!

And of course, while I was shopping for the boys...I might have found a few things for us ladies too...

The "softer than cashmere" plaid scarf.  Hello?  It says it all in the name!  Yes, it's in the men's department...but ladies, we've talked about this...that's ok!  It's fabulous, who cares?!  And it's under $20!

And then on Wednesday, I threw on my leather jacket that's 3 years old and posted a pic on Instagram and you people loved it.  Have we not discussed leather jackets?  I guess not!  Here's the pic...

Now...another Shull family tradition...

This is not earth shattering...but, it's a Shull family tradition and thus, I will share it with you!

Every year, when we get our Christmas cards, we tape them on our kitchen cabinets and pantry door...



...by the end of the year, we have them covering all of the cabinets and the pantry door.  I love doing this because every single time I open a cabinet, I see my friends' sweet faces.  I also love that it instantly makes my kitchen feel more festive.  I use Scotch tape and fold it over and stick it on the back and the paint is never damaged.  If you don't know what to do with your cards, I suggest hanging them :).

And can you believe it's Week 49 of the year?!?!  Here are my #shayeveryday2013 pics from Week 49!

Day 337: I hosted my annual recipe exchange!  This is my favorite party during the year!


Day 338: As we were getting out of the car, they asked if they could wrestle...I said no...and so they said they would just "hug really hard".  I can't win.


Day 339: I spent the day in my office while the kiddos were in school.  Starbucks Red Cup, lit candle, cozy blanket, Christmas lights, Michael Buble's picture, cookbooks, travel books and carols on my radio...one happy girl.


Day 340: We had our first snow day of the season!  We stayed in, watched movies, made cookies, and played in the snow!  Such a wonderful day!!


Day 341: We got out in the snow and ice and visited Lovie...Kensington Cottage looked so pretty covered in snow! (And I know you're going to ask...a close family friend...who is now retired...custom built the house for my parents.)


Day 342: We stayed in all day until it was time to run up to church to get ready for Christmas Journey!  We were happy to get out for a bit and see our friends.


Day 343: We made our annual trip to see Santa!  Such a fun evening!!

Slow Cooker Pulled Pork with Sauerkraut Recipe



I bought canned sauerkraut for the first time ever to make this recipe. Guess what? It's in the canned vegetable aisle, not the condiment aisle.
Go figure.

I am not much of a sauerkraut person. Adam always asks for it when we get our after-shopping hot dog at Costco (you get a hotdog each time you're at Costco too, right?) but I've never been interested.

But a friend of a friend* wrote out her pulled pork with sauerkraut recipe on the back of a business card for me and insisted I give it a try.

So I did.

and I now see more sauerkraut in my future.

huh! 

go figure again.

* who prefers to remain a silent anonymous being because the internet is full of nutjobs. Present company excluded, of course.

The Ingredients.
serves 8 (maybe more if you serve the meat/veggies on buns)


2 pounds pork tenderloin
1/2 teaspoon dry mustard
1 teaspoon dried thyme
1 teaspoon dried sage
2 teaspoons paprika
1 teaspoon kosher salt
1 teaspoon black pepper
1/2 cup shredded carrot
1 (14.5-ounce) can sauerkraut (the whole thing)
1 teaspoon caraway seeds
8 rolls for serving (optional)

The Directions.

Use a 6-quart slow cooker. Put the roast into the bottom or your cooker. In a mixing bowl, combine the dried spices: mustard, thyme, sage, paprika, salt, pepper.
Rub these spices on all sides of the roast. Put the shredded carrot, sauerkraut, and caraway seeds into the empty bowl, and stir to combine. Then pour all contents on top of the spiced roast.
Cover and cook on low for 8 to 10 hours, or until the meat shreds easily with two forks.

HEY! there's no liquid? no broth? what's up with that?

It's not a mistake, I promise. The wetness from the sauerkraut combined with the meat juices is plenty for your roast to cook properly, and become fully shredded and lovely. If you have a pot that doesn't trap heat/moisture in very well because of a gap in the lid, or a spoon notch, you can lay down a layer of foil and then put the lid on. You want to see a bunch of condensation on the lid while the crockpot is in use.

Shred the meat completely, and stir well. Serve as is in a bowl, or serve spooned into toasted rolls. 

The Verdict.

I love how the tang from the sauerkraut and mustard tastes when mixed with the spices---especially the caraway---it tastes Irish (caraway is the pronounced flavor of rye bread or Irish soda bread. Since rye is off-limits when you're gluten free, I like begin able to get a hint of that when I can!)

The girls and I ate our meat by itself over some rice, but Adam made sandwiches for himself with French's mustard.
If you're looking for a way to sneak extra veggies into your family dinner, this is a good candidate. No one would notice if you added some shredded zucchini or cucumber.
